Having grown up in New Jersey, Yan has closely attuned himself to the local restaurant scene. Yan has worked in acclaimed kitchens such as Mistral, Heirloom Kitchen, and Lita.
In the Spring of 2024, Yan opened Ram & Rooster, his first restaurant project. With support from his family and peers, Yan hopes to bring an unparalleled experience to the diners of New Jersey with his Chinese inspired concept.

Steve Colombero's journey in the hospitality world began at a young age, much like many of us. What initially seemed like a fleeting interest evolved into a passion-driven career spanning over a decade across various establishments in New Jersey.
From honing his craft with Michelin-worthy experience at Rose's Luxury in DC to returning to his roots in the vibrant culinary scene of NJ, Steve brings a wealth of expertise and a commitment to excellence to every endeavor.

Roselyn Achacoso
Chef de Cuisine
Roselyn’s dedication to connecting her heritage to culinary has inspired her to create authentic and comforting dishes. Her former work experiences include NYC’s two Michelin star JungSik, and Millburn’s Common Lot.
Her leadership in the kitchen has recognized Roselyn as one of the “9 female chefs dominating the NJ food landscape”. Roselyn is confident her passion and creativity sets high standards for Ram & Rooster.

Derrick Bradley
Sous Chef
With a deep love for people, food, and creativity, Derrick was naturally drawn to the hospitality industry, where these passions intersect. His culinary journey spans both international and domestic experiences, including Nantucket, New York, D.C., and his home state of New Jersey.
Derrick finds joy exploring and connecting cultures through the shared experience of food. He believes every dish tells a story and strives to create memorable moments that bring people together.
